Slow Cooked Preserved Lemon Lamb with Crispy Rice Salad

Accidentally made my new go to slow cooked recipe

A few days ago I was doing my usual thing, slow cooking on a Sunday. I wasn’t really prepared though, I only had a lamb shoulder and not much of plan of what I was going to pair it with. I was actually in the biggest CBF mood, I didn’t want to chop up anything to cook the lamb in, and I especially couldn’t be bothered cooking potatoes to go with it (the usual culprit for me n lamb tbh)

So in the morning when I was throwing the lamb on (still frozen from the market mind you) I checked for lemons to find I had none. I always love squeezing a couple in with lamb so I was a bit devo. Then I remembered I have a huge jar of preserved lemons I made last year. I thought fuck it, I’m gonna chuck a couple in, in lieu of fresh lemon. And after 5 - 6 hours of slow cooking, something insane came out of the oven.

And as I mentioned, I CBF’d with potatoes, but obviously a girl needs her carbs. I opened my fridge to find a big container of left over rice and thought that’l do. I ended up crisping it up and tossing with cucumber and a bunch of herbs and made one of the best dinners I’d eaten in a long time!
